It is spaghetti squash season & boy do we love it! The recipe we tried this week was a hit! My husband commented that this is probably one of his favorite dishes. This is a fun recipe but a little labor intensive. It was tasty!!! We added tomatoes from HHM. The eggs and the potatoes were from HHM too. If you have signed up for our CSA bag for 4, you have gotten potatoes for a few weeks. HHM's CSA bag is a great way to get a variety of vegetables and sometimes fruit that aren't listed on the HHM website. BONUS!! We have A LOT OF TOMATOES right now and needed to find a creative way to use them. I was craving pizza and came up with this recipe from Pinterest. It was technically for flatbread but made it into a pizza since I had just made pizza crust. I didn't have any fresh basil on hand, so I just used dried. We over did it on the balsamic which then made the crust a little soggy. SO, if you put a little less balsamic on it, you will be good! Hope you like it!! Caprese Pizza with
Happy Labor Day to you!! It's hard to believe the summer is pretty much over and we are heading into Fall. We have a pool party we are going to today and I needed to come up with a dip or two to take. I had some corn on the cob that I needed to use so this dip was perfect and it runs with my theme of Mexican Corn on the Cob I've done a few times this year. Peanut Butter Fruit Dip is the other dip I have used a few times and it is a hit with the parents and with the kids.
