

Beet Hash with Eggs
To be perfectly honest, beets aren't my favorite. They keep showing up in my CSA bag and I thought I should try to like these little things instead of just giving them away every time I get them. : ) This recipe was really pretty good and were the best tasting beets I've had. I think it helped to have the egg on top and adding a little more salt. My kids still aren't a fan and it is a goal of mine to find a way that they will like them. Have you noticed a theme in the past two post? They both have easy in the recipe title. It wasn't intentional but I do like the easy button in the kitchen. : ) This is a recipe I've used for years and my family likes it! I did change the recipe a bit. Easy Taco Soup
This is an absolute favorite of my family!! It is easy, it feels healthy, and everyone loves it! The hardest thing to do is fry the hamburger and that is pretty easy. The original recipe says to use chili with beans and meat, but I prefer Brooks Mild Chili Beans and then add my own meat. The recipe also calls for 1 can of black beans.
