Healthy Buffalo Chicken Bowls

It's always fun to try new recipes and even more fun when everyone likes it AND it's healthy! This recipe is a new find and I'll be making this again soon!

This could be fun recipe for the Super Bowl game this weekend!! I added salsa to my bowl and it added a little more flavor too. Did you know Some Like it Hot has their salsa & tamales on SPECIAL for the Super Bowl?

A few modifications from the recipe. This recipe called for 2 cans of corn. I used frozen corn and I warmed it up in the microwave. I warmed the black beans in the microwave too. The recipe didn't say to warm either one of these. I couldn't find the packet of Hidden Valley Greek Yogurt Dressing but did find a bottle of it already made. That being said, I didn't need the Greek yogurt or the milk.

From HHM: chicken breasts, corn, garlic, fresh cilantro and salsa.

Healthy Buffalo Chicken Bowls

Prep time: 10 mins

Cook time: 3 hrs 20 mins

Ingredients

2 cans corn (Souder Farms Sweet Corn)

2 cans black beans

3 avocados

a pint of cherry tomatoes halved

6 chicken breasts (Becker Farms)

1 cup of your favorite buffalo sauce I use Franks

1 TBS garlic minced (Garlic Boss)

fresh cilantro (Healthy Roots)

Salsa (Some Like it Hot)

1 packet Hidden Valley Greek Yogurt Dressing

1 1/3 cups plain Greek yogurt

3 TBS milk

Instructions

1. Cook chicken, garlic and hot sauce to slow cooker and cook on low for 6 hours or on high for 3 hours. When chicken is cooked through, shred it and set aside.

2. In a separate small bowl mix together your Hidden Valley Greek Yogurt Dressing , Greek yogurt and milk and stick it in the fridge.

3. Next, drain and rinse your corn and black beans and add them to a bowl. Rinse and half your cherry tomatoes and add them to the bowl as well. Lastly, dice your avocados and add them to the mix!

4. Assemble your bowls by adding your veggie mixture, topping with chicken, and finishing them off with some healthy Greek yogurt ranch dressing (or whatever your favorite ranch dressing is).
