Healthy Buffalo Chicken Bowls
It's always fun to try new recipes and even more fun when everyone likes it AND it's healthy! This recipe is a new find and I'll be making this again soon! This could be fun recipe for the Super Bowl game this weekend!! I added salsa to my bowl and it added a little more flavor too. Did you know Some Like it Hot has their salsa & tamales on SPECIAL for the Super Bowl? A few modifications from the recipe. This recipe called for 2 cans of corn. I used frozen corn and I war

Easy Taco Soup
This is an absolute favorite of my family!! It is easy, it feels healthy, and everyone loves it! The hardest thing to do is fry the hamburger and that is pretty easy. The original recipe says to use chili with beans and meat, but I prefer Brooks Mild Chili Beans and then add my own meat. The recipe also calls for 1 can of black beans. I always add 2 cans and sometimes 3 cans of black beans since they are really good for you. The meat, sweet corn, and lettuce are all from

Leek Omelet
My husband, Dave, came up with this recipe this weekend and it was TASTY! Leeks are a new vegetable to us. We had no idea they were in the onion family. Once we figured out they were a lot like onions, it took away the mystery of how we were going to cook with them. The eggs, leaks, garlic dill cheese, and parsley were all from HOOSIER HARVEST MARKET. Filet Mignon. Parmesan Roasted Potatoes. Mexican Sweet Corn. DELIGHTFUL!
Who doesn't love a nice filet mignon from the grill, new potatoes and sweet corn? This tells me summer is here and makes me remember the fun summers I had as a kid. Especially the corn on the cobb. I have yet to have my kids help with the shucking of the corn but I think that is coming soon. What keeps running through my mind is I have a 8 and 9 year old and it is probably more of a mess to have them help than just do it myself. I'm sure they would think it was fun the fi

CONNOR'S ULTIMATE BLT
Who doesn't love a BLT, right? This has a little fancier twist and would be perfect if you were having friends over for lunch or if you just want to try something new. The Sriracha Mayo is tasty but a little on the spicy side for kids. I used Olive Oil Mayo with the sriracha. My kids thought it was good but still asked for just a bacon sandwich. They always say, can you leave the lettuce and tomato off. I've never given them a bacon with mayo sandwich but it never hurts

Mexican Street Corn
This corn on the cob is amazing!! We have a friend that loves anything corn and she made this recipe. So, I thought I would make it and share it with you! Who would have thought you could step up the corn on the cob game? In the past, we've just made corn on the cob the "normal" way with butter & sometimes a little salt. Well, this recipe takes things to a whole new level. This was supposed to have cilantro sprinkled on it, but the two grocery stores I went to were out

Garlic Rubbed Roasted Cabbage Steaks
This one is a family favorite! The only downside is it takes a while for the cabbage to bake so be sure to leave plenty of time. Prep Time: 5 minutes Cook Time: 60 minutes Ingredients 1 (approx 2lb) head of organic green cabbage, cut into 1" thick slices 1.5 tablespoons olive oil 2 to 3 large garlic cloves, smashed kosher salt freshly ground black pepper spray olive oil OR non-stick cooking spray Instructions 1. Preheat oven to 400F and spray a baking sheet with non-stick co

Garlic Scape Hummus
This recipe is really easy but a word of warning though . . . Garlic Scapes are potent little things!! This past weekend we made Garlic Scape Hummus. It was good, but the garlic taste was really strong and we came to the conclusion that we used too many Garlic Scapes. Using a food processor might have released more flavor, also, so we'll probably hand chop next time. We tried to neutralize the garlic a little by adding some Olive Oil Mayo (you could use sour cream, too) an

Garlic-Sautéed Swiss Chard
In the last Hoosier Harvest 365 Bag, Swiss Chard was included. Personally, I've never made Swiss Chard so this was a new adventure to me (and my family). So I started the conquest of looking for a recipe that sounded good and was kid friendly. I have a 9 & 8 year old so this can be a challenge sometimes! On Pinterest, I found Sautéed Chard with Bacon and Tomatoes recipe that sounded fairly simple and good! This recipe came from The Sophisticated Caveman on Pinterest. I

The Best Green Bean Casserole
No Thanksgiving table is complete without the classic green bean casserole. Sometimes there can even be several of them battling for table space at larger gatherings. Just what is it that makes Thanksgiving incomplete without at least one Pyrex dish of these creamy green beans? And really, what is there NOT to love? Those deliciously evil fried onions so tempting to just eat right out of the can; the creamy, rich mushroom soup; and yet still, it had never been enough for me t
