It was just an ordinary Saturday & my husband wanted to make breakfast. I let him whenever he wants. : ) It's a nice treat, a break for me AND he's a good cook. He does make a mess though. I guess it's still a win!! LOL This time he sauteed crimini mushrooms, fried an egg & added some shredded gruyere cheese on top. Added some sliced strawberries, made some coffee, & we had a tasty meal! So many great flavors between the mushrooms & eggs. It makes my mouth water just


Egg Sandwich w Avocado Corn Salad
Breakfast is my favorite meal and I absolutely LOVE egg sandwiches. Add some fun cheese and the flavor is unbelievably GOOD! This week I made Avocado Corn Salad and used it for our taco's which was really good too. But the next morning, my husband had the great idea to put the Avocado Corn Salad on an egg sandwich. Boy was it amazing!! The Avocado Corn Salad is delicious by itself but add an egg & cheese & it's definitely a winner!! Ill be making the Avocado Corn Salad


Asparagus Quiche
Initially, this didn't sound good to me at all. I had just bought Joanna Gaines cook book & there were 2 quiches listed. One was cheese quiche & the other one was this one. It was during Christmas & we had my mother-in-law staying with us so we had a reason to make a bigger breakfast. My daughter & I decided to make both of the quiches on different days to see which one was better. We all banked on the cheese one. Boy were we wrong. The Asparagus Quiche was amazing!!!

In my CSA bag last week, I got fresh spinach & oh does it taste good!! There are so many ways to use spinach other than in a salad. I love the versatility of it!! Leek Omelet
My husband, Dave, came up with this recipe this weekend and it was TASTY! Leeks are a new vegetable to us. We had no idea they were in the onion family. Once we figured out they were a lot like onions, it took away the mystery of how we were going to cook with them. 1 pound heirloom tomatoes
1/4 cup olive oil
1/4 cup shredded fresh basil
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
5 whole garlic scapes or 3 finely chopped cloves of garlic For the home fries:
6 medium Yukon Gold potatoes, julienned

4 cup
