Valentine's Day Bundle

Last week we ordered the Valentine's Day Bundle for a stay-in Valentine's Day. The filet mignon from Well Done Beef was delicious. It was melt in your mouth delicious. On top of the filet we had mushrooms and onions. Mushrooms are a favorite of ours and these didn't disappoint. We had Ranch Carrots and used FRESH PARSLEY and FRESH DILL. Our salad came from Healthy Roots along with broccoli microgreens and Feta from Caprini Creamery. It was fun to celebrate at home with my family.

Steak Rub

Ingredients

Salt

Garlic Powder

Dash of Chili Powder

Dash of Pepper.

Instructions

Oven safe pan sear steak about 1 min on each side. Put pan in oven for about 8-10 min at 450 degrees.

Sautéed Mushrooms and Onions

Ingredients

2 cups sliced mushrooms (1/2 lb or 200g)

1/2 onion, sliced

1 tbsp canola oil

1/2 tbsp butter

1/4 cup red wine

1/2 tbsp soy sauce

1/4 tsp black pepper

Instructions

  1. In a large skillet, heat oil and butter over medium heat.

  2. Add mushrooms and onions.

  3. Cook until mushrooms are tender and starting to brown, about 15 minutes. Stir often.

  4. Stir in wine and soy sauce to pan, scraping any browned bits off the pan.

  5. Cook and stir for 2 to 3 minutes or until liquid is reduced.

  6. Season with pepper to taste (the soy sauce should provide plenty of saltiness).

Notes

  1. Consider adding herbs like rosemary or thyme to vary the flavor. You can also substitute the wine with white wine or soup stock.

  2. Use a large skillet to avoid crowding the mushrooms causing them to steam. If doubling the recipe, fry in two separate batches.

Easy Ranch Baby Carrots

Ingredients:

1 (16-ounce) package baby carrots, patted dry

2 tablespoons olive oil

2 tablespoons unsalted butter

2 tablespoons chopped FRESH parsley leaves

For the ranch seasoning mix

1 teaspoon FRESH parsley

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon FRESH dill

1/4 teaspoon ground black pepper

Directions:

1. Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.

2. To make the Ranch seasoning mix, combine parsley, garlic powder, onion powder, salt, dill and pepper in a small bowl.

3. Place carrots in a single layer onto the prepared baking sheet. Add olive oil and Ranch seasoning mix. Gently toss to combine.

4. Place into oven and bake for 18-20 minutes, or until tender. Stir in butter until melted, about 1 minute.

5. Serve immediately, garnished with parsley, if desired.
