Caramelized Onion and Spinach Quiche


In my CSA bag last week, I got fresh spinach & oh does it taste good!! There are so many ways to use spinach other than in a salad. I love the versatility of it!! Lately my family has been on a quiche kick & this recipe doesn't disappoint!! It was fairly easy & quick to make.

Caramelized Onion and Spinach Quiche

Prep Time: 15 Minutes

Ingredients

1 tablespoon olive oil

2 small onions sliced

2 cups fresh spinach

5 large eggs

2 cups shredded fontina

1 cups shredded jack cheese

Instructions

Preheat the oven to 350 degrees. Spray s pie plate with non-stick spray and set aside

Heat oil in a large skillet over medium-high heat. Add sliced onions and cook for 10-12 minutes or until onions caramelize and soften (be sure you stir the onions constantly). During the last few minutes, add fresh spinach to the onions and cook just until the spinach softens but do not allow it to wilt. Spinach should be vibrant and have a little bite. Remove vegetables from heat and allow them to cool.

In a bowl, whisk together the eggs, shredded fontina cheese, and jack cheese. Add vegetable mixture; stir.

Pour egg mixture into prepared pan and bake for 45 minutes.

***Mine only took about 30 minutes to cook.**
