Filet Mignon. Parmesan Roasted Potatoes. Mexican Sweet Corn. DELIGHTFUL!


Who doesn't love a nice filet mignon from the grill, new potatoes and sweet corn? This tells me summer is here and makes me remember the fun summers I had as a kid. Especially the corn on the cobb. I have yet to have my kids help with the shucking of the corn but I think that is coming soon. What keeps running through my mind is I have a 8 and 9 year old and it is probably more of a mess to have them help than just do it myself. I'm sure they would think it was fun the first couple of times they did it . . .

My mom is visiting from Missouri and I wanted to share some of the fun recipes I've been making for the blog and to have her taste the quality of the food I've been getting from Hoosier Harvest Market. As we were eating the meal, my mom said this filet mignon was as good as any 5 star restaurant filet she's ever had. The meat was good by itself without needing to add any type of sauce to it. It was tender, juicy and had great flavor.

The Parmesan Roasted Potatoes were something she had never had before. It was unique and oh so tasty! She will definitely make this when she's back home. The topping was to die for!! And believe me, she's skeptical when trying new stuff and she loved it!

Straight from my mom's mouth, corn on the cobb is usually just a delivery for extra butter BUT the Mexican Street Corn was suburb and she didn't miss the butter one bit!! Filet Mignon

Ingredients

Salt

Pepper

Garlic powder

Cayenne

Cumin

Instructions

My husband created this rub & just dumped a little of each ingredient in a bowl, mixed the spices together, and rubbed it on the steak. Grilled to perfection.

Parmesan Roasted Potatoes

Prep Time: 5 mins

Cook Time: 45 mins

Ingredients

1.5 lb honey gold potatoes, halved

1/4 cup olive oil

1 envelope (1 oz) onion soup mix

1/2 cup parmesan plus additional for garnish

Instructions

1. Preheat oven to 425 degrees.

2. Add all ingredients to a large gallon bags and shake well to coat.

3. Pour in a single layer on a well greased 9 by 13 casserole dish.

4. Cover with aluminum foil and roast for 25 minutes covered, then 20 minutes uncovered.

5. Garnish with additional parmesan if desired.

Best Mexican Street Corn Recipe

Prep time: 10 mins

Cook time: 35 mins

Ingredients

6 Ears Fresh Sweet Corn

6 Tablespoons Mayonnaise

½ Teaspoon Garlic Powder

1 Cup Cotija Cheese, Crumbled

6 Tablespoons Fresh Cilantro, Roughly Chopped

1 Teaspoon Chipotle Chili Powder

2 Limes, Quartered

Instructions

1. Preheat oven to 350 degrees F. Place corn in husks directly on the oven rack. Bake for 35-40 minutes or until fork tender.

2. While corn is cooking, in a small bowl combine garlic powder and mayonnaise.

3. When corn is done href="https://amzn.to/2HdHoam">brush with garlic mayo. Roll in cotija cheese.

4. Sprinkle with cilantro and chili powder.

5. Squeeze with fresh lime juice if desired.
