Who doesn't love a BLT, right?  This has a little fancier twist and would be perfect if you were having friends over for lunch or if you just want to try something new.  The Sriracha Mayo is tasty but a little on the spicy side for kids.  I used Olive Oil Mayo with the sriracha.  My kids thought it was good but still asked for just a bacon sandwich.  They always say, can you leave the lettuce and tomato off.  I've never given them a bacon with mayo sandwich but it never hurts to ask I guess!  My husband and I thought this was a good recipe!!  I didn't have any sourdough bread on hand so I just used our normal bread.  Also, I fried the egg a little longer than sunny-side up.

Connors Ultimate BLT


Yield: 1 Large Sandwich

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes




Sriracha Mayonnaise:

1 tablespoon mayonnaise

1 teaspoon sriracha



1 large slice of sourdough bread, toasted

sriracha mayonnaise (see above)

baby arugula

1 large slice of tomato

2 slices of crispy bacon

1 egg, sunny-side up

1 large slice of avocado





1. Stir together the mayonnaise and sriracha in a small bowl.

2. Layer the toasted bread with the sriracha mayonnaise followed by the fresh arugula, tomato, bacon, fried egg, and avocado.  Season with salt and pepper. Serve immediately.
